Instructions
- Stab the chicken pieces a few times with a knife to help the marinade penetrate.
- Put the chicken pieces in a bag, or a large oven safe dish.
- Add the remaining ingredients, mixing everything together to completely coat the chicken.
- Marinate in the fridge overnight, or at least for a few hours.
- Preheat the oven to 200°C/180°C fan
- If using a bag, empty the chicken and the marinade into a large roasting dish. Turn the chicken pieces so they are skin side up and put in the oven for about an hour and a quarter. The chicken should go a nice dark brown and the skin should crisp up on top.
- Serve with egg fried rice and some side veg.
