Instructions
- Put the rice in a saucepan on a high heat with a little oil and cook, stirring for a few minutes.
- Add 500ml boiling water, give it a stir, put a lid on and turn the heat right down. Leave to simmer away for around 10 minutes, or until the water has all been absorbed, then take off the heat.
- Put a wok on a medium heat, add some oil, and fry the spring onions and peas for a few minutes.
- Crack in the eggs and stir fry until scrambled.
- Tip in the cooked rice and the soy sauce, stir fry for a few minutes and serve.
