4-6 1.5hrs + marinade overnight

Instructions

  1. Stab the chicken pieces a few times with a knife to help the marinade penetrate.
  2. Put the chicken pieces in a bag, or a large oven safe dish.
  3. Add the remaining ingredients, mixing everything together to completely coat the chicken.
  4. Marinate in the fridge overnight, or at least for a few hours.
  5. Preheat the oven to 200°C/180°C fan
  6. If using a bag, empty the chicken and the marinade into a large roasting dish. Turn the chicken pieces so they are skin side up and put in the oven for about an hour and a quarter. The chicken should go a nice dark brown and the skin should crisp up on top.
  7. Serve with egg fried rice and some side veg.
